Honoha Sushi (sushi wrapped in Magnolia leaves) originated during the mid-Edo period when the lord of Kishu (present-day Wakayama) imposed taxes on the fishermen of Kumano. To raise money, the fishermen salted summer mackerel and came to sell it in the villages along the Yoshino River.
Coinciding with summer festivals and celebrations, this dish became a special treat for events like the lunar calendar’s 5th month festival (June 5th). It consists of salted mackerel placed on top of rice, wrapped in magnolia leaves.
The refreshing forest aroma from the leaves contributes to its unique flavor, and the preservative properties of the leaves extend the life of the ingredients.
